In addition to the traditional products such as cress, mustard and salad rape often used in sandwich fillings, a wide range of products have been tested and identified as suitable for use in ‘microgreen’ form. They have been selected to add flavour, texture and interesting appearance to salads and cooked dishes.
Microgreens are generally grown under lights in punnets and trimmed off just before use. They are usually harvested just as the first true leaves appear, in around 7-14 days depending on the species. For commercial production, a comprehensive range of growing and packing media is offered by online suppliers, and careful attention to detail in production and hygiene is essential during production.
